Yay! We finally de-frosted and cut the cake yesterday and it came out really good! No freezer burns or anything. I came home at lunch yesterday and we cut it at about 6PM. The icing was perfect, the cake...I will give it an A-, It was very soft, and fluffy, and had a lot of flavor. And I bake cake a lot so I know cake. My sister, DH, and brother-in-law all tasted the cake and they loved it. I see why everyone sopped it up at the wedding, and we only were able to get a bite because we were so busy at the reception!
At the advice of my WC who did hers the same way, we put it in that little box Publix provides for you, and wrapped it in about 4 or 5 continuous layers of Saran Wrap. After that, we wrapped it in about 5 layers of foil paper, each time, making sure very little air was in the box. After that we put it in a couple of plastic grocery bags, and tied it....Oh yeah, when we wrapped the last layer of both the Saran Wrap and the Foil, we taped the loose corners down. So it took me more than 2 or 3 minutes to un-wrap the whole thing....And it was definitely worth the wait, so make sure you make arrangements for it to be wrapped or wrap it yourself and put it in the freezer. I'll post a pic when I get home from work!

Wow! That is great! I will definitely follow those same instructions. I did used to wonder about freezing the cake for so long. Congrats to you 2 on your Anniversary.

Cool! Thats an awesome option. Thats definitely good advice to pass to the other brides to ask their bakers/caterers about.

I might try this...
Chil....my husband and I ate half of our top layer of our cake on that wedding night. Whe we had the cut the cake portion of the reception of course we only cut a sliver of it. After tasting it we both said we would go back and get us a nice chunk of it....it was SOOOO good! By the time I went around the room speaking and greeting folks the cake was GONE!!! We said forget a "tradition", we are digging into this TONIGHT!...
I dont even want the catering hall to safe it form me. My fh is not really a sweets eater and I am surely not eating a defrost cake

It sounds like a good idea. I would definitly do it If the greedy people in my family dont finish it first.

OK Bumble-obviously this needs to be done immediately which may pose a problem for us...I don't want to be wrapping cake a 3:00 in the a.m. before we catch our 6:00 a.m flight-I wonder if it sits in the fridge for a few days until we get back if it will be ok???

Well I am not sure...are you talking a week or more? At the very least try freezing it when you return, then in a year, if its bad, just order another. We definitely were ready to call the bakery if it wasn't good but it surprisingly was, and I am very picky! Even Still an 8" isn't much $$. So either way its worth a try...Don't go wrapping no cake at 3AM. Unless you wrap it before bedtime.

FREEZING YOUR CAKE
Freezing the top tier of your wedding cake is a wonderful tradition. You can defrost it and share it for dessert on your first anniversary.
To make sure your cake is as tasty as it was on your wedding day, all you need to do is:
Freeze the cake for five to six hours to set the frosting, then wrap it in several layers of plastic.
Place the wrapped cake in a bakery box to protect it from being damaged by other goodies in the freezer, and then wrap the box with several more layers of plastic wrap, making sure to seal the box completely. That's it. Now, just tuck that little dickens in the freezer and you will have a wonderful first anniversary cake next year.
(There is a lot of wrapping in plastic wrap, but it's worth it.)
Note: If your cake had custard filling, freezing it is not recommended because the filling could separate
THAWING YOUR CAKE
To thaw your cake, just remove the cake from the freezer and immediately remove all the plastic wrap and thaw in the refrigerator for 48 hours, then place at room temperature for 2 to 3 hours.
Or,
You can skip the thawing in the refrigerator for 48 hours, and thaw at room temperature until completely thawed.
Either way, your cake will be as beautiful and delicious as the day of your wedding!

Thanks VIPrincess. We did all that plastic wrap and as aggravating as it was, it was well worth it.....The cake was pretty good, AND definitely didn't stale or like the box!
