My wedding ceremony is on the beach. I'm trying to figure out how we can do the unity candle part (while the wind gusts roll in off the waves) without the flames going out once they're lit. Only thing I can think of is lighting the candle right before the first dance...Any other suggestions?

that is a great place to have your ceremony it will be beautiful. I think that lighting them before the first dance will be great. Or maybe you can light then just before you cut the cake, but you want to do it before the party starts. Best of Luck
Cinny...Have you thought about the sand ceremony instead of the unity candle? I know that it's pretty popular for beach wedding because of the simple fact of the candles blowing out.

Bossie's idea is totally fabulous but if your heart is set on the unity candle...I know in my church we have large glass holders that protects the flames so you may want to consider something like that....here is a link Unity Candle Holder
