I have been searching everywhere for someone who can bake and decorate a black wedding cake for my wedding. Whenever I find someone they always say "I can bake the cake for you, but I do not decorate." I just want to find someone who can make me a yummy black rum cake with the traditional jamaican/west indian icing. If I can find someone who can make the icing and decorate the cake for me that would be a great start at this point since I found a couple of people who can bake the cake for me. I've tried calling a lot caribbean food places I could think of and still nothing. My wedding date is 10/29/05. Can any one of you pleeaaaaase help me????

Have your cake made and take it to a bakery or confectionary to have it decorated. They will usually charge a lot less than if you had the entire thing done at the shop. Everyone knows black cake is best when the rum has aged and the cake itself has aged so get cracking on getting the cake made then iced right before the wedding. Oh GOD do I love Black Cake! YUMMMMMMM! Lucky girl. I should make you send me a cake box. LOL.

To bad you live in Atlanta cause my cake is being made by a family friend and she can do just about anything. And RUMMMMMMMMMMMMMMMMMMMMMM I love it! You go girl.

i understand you live in Atlanta. However, the west indian restaurants in New York do bake and decorate a black cake. There is a restaurant called "Sybils" in Queens and Brooklyn (they have 3 locations of this family-owned restaurant)and they definately take orders for wedding cakes and decorate them. I am not sure if NY is an option for you or not, but if it is, then they will do so. Good luck.

I'm new to the site and saw your request. I want a black cake for my wedding as well (Aug 2006) and found a website www.therumcakeplace.com. They have beautiful and wacky cakes with all different fillings. They also ship to wherever you are. I'm thinking about having mine shipped to Jamaica. I hope this helps.

No you wouldn't have to have a baker to decorate it once it shipped. I called and spoke to the lady, ( she's Guyanese) and she said that it's same day shipping and it's cold packed. I can't remember the other details but if you check the website you can call and she can explain.
Just out of curiosity I will contact them cus I have really never heard of shipping a wedding cake....thanks for the information Tonachelle....oh and welcome to this fabulous site.

Girl Island I giggle too much now - if I were to drink rum church would be out! (island talk) I had me a small glass of asti spamante (sp?)in the christmas of 95 and my daughter was born september of 96...soo..no rum for charlotte :-)

Hi Guys this is my first post, glad to find this forum. I am a cake decorator in Brooklyn NY. I specialize in making Caribbean Black Rum cakes.
Black rum cakes start out by using assorted fruits such as cherries, raising, currants and prunes, which are soaked in rum and red wine for months so they absorb the flavor throughly.
They are then made from scratch using brown sugar, flour eggs ect., as many other cakes. The difference is that we use burnt sugar to make it dark, hence the name black cake and a lot of spices go into the cakes also. Most people don't want to see taste the pieces of fruit so that is blended finely before adding it to the mixture.

What do you mean by special occassion? Are you asking about events other than a wedding...and/or cakes other than black rum??

I KNOW! lol. My mouth was watering so bad. The people who own Mama's Roti live next door to me amnd they make the most amazing cakes, but she didn't have any. She did have the currants and raisins soaking in rum though! I make mine with guavaberry rum. That's my little secret but I will share it with just you. lol
